Pork adobo is rich, savory and practical for family meals, catering and restaurant batches. Pork kasim works well because it becomes tender while keeping enough texture during simmering.

Pork adobo ingredients

  • 1 kg pork kasim, cut for adobo
  • ⅓ cup soy sauce
  • ⅓ cup vinegar
  • 1 to 1½ cups water
  • 1 head garlic, crushed
  • 3 dried bay leaves
  • 1 teaspoon whole peppercorns
  • 1 tablespoon cooking oil

How to cook pork adobo

  1. Marinate the pork with soy sauce, half of the garlic and pepper for 30 minutes.
  2. Heat oil and sauté the remaining garlic until fragrant.
  3. Add the pork and cook until the edges begin to brown.
  4. Pour in the marinade and water. Add the bay leaves and bring to a boil.
  5. Add the vinegar and allow it to boil for 3 minutes before stirring.
  6. Cover and simmer over low heat for 45 to 60 minutes, adding a little water when needed, until tender.
  7. Uncover and reduce the sauce. Adjust the final balance of soy sauce, vinegar and water.

Kitchen notes

Cut the pork into even pieces so it cooks at the same rate. For larger restaurant batches, use the same ingredient ratio and extend cooking time as needed rather than raising the heat too aggressively.
