Chicken adobo ingredients
- 1 whole chicken, cut into serving pieces, or 1 kg chicken pieces
- ⅓ cup soy sauce
- ⅓ cup vinegar
- 1 cup water
- 1 head garlic, crushed
- 3 dried bay leaves
- 1 teaspoon whole peppercorns
- 1 tablespoon cooking oil

How to cook chicken adobo
- Marinate the chicken in soy sauce, half of the garlic and pepper for 20 minutes.
- Heat oil and sauté the remaining garlic until fragrant.
- Add the chicken and cook until lightly browned.
- Add the marinade, water and bay leaves. Bring to a boil.
- Pour in the vinegar and allow it to boil for 3 minutes before stirring.
- Cover and simmer for 25 to 35 minutes, or until the chicken is cooked through and tender.
- Uncover and reduce the sauce if you prefer a drier adobo.
Kitchen notes
Add a little water if the sauce becomes too salty. For restaurant batches, keep the ingredient ratio consistent and confirm that the chicken reaches a safe internal temperature before serving.
